How to Make a Baskin Robbins Ice Cream Cake

If you've seen the ice cream cakes at Baskin Robbins or maybe have even purchased one from time to time, you know that they're built in layers of cake and ice cream. You can make your own ice cream cake using your favorite cake recipe and favorite ice cream flavors. You need only a few basic ingredients and kitchen utensils, and a little time, to make an ice cream cake and decorate it any way you like for all special occasions.

Steps

  1. Follow the directions for your favorite homemade cake from scratch or boxed ingredients to bake your cake.
  2. Let your cake cool down to room temperature.
  3. Slice your cake in half with a piece of dental floss or very sharp knife.
  4. Set each half of your cake on a cookie sheet, platter or tray covered with waxed paper (it must fit into your freezer).
  5. Slice through the middle of 1 box of praline ice cream (or your favorite) with a serrated knife (do not remove from box before slicing).
  6. Remove the cardboard.
  7. Lay 1 half of the ice cream on each half of your cake.
  8. Slice around your cake to make it even with the ice cream.
  9. Place your cake in the freezer for 1 to 2 hours.
  10. Remove from the freezer 2 pints (0.94 L) of vanilla ice cream.
  11. Let the ice cream soften for 20 to 30 minutes.
  12. Stir the ice cream until smooth.
  13. Remove your cake from the freezer.
  14. Cover the surface of each cake with the ice cream using a spatula.
  15. Place your cake back into the freezer for about an hour.
  16. Prepare white (or other) frosting (either homemade or pre-made) and put it into a pastry bag.
  17. Decorate around the top perimeter of your cake with the white (or other) frosting.
  18. Decorate around the bottom perimeter of your cake with the white (or other) frosting.
  19. Change the color of the frosting (or use a different flavor of frosting) and/or use different decorating tips to add your own touches to your cake.
  20. Cover your cakes with waxed paper and re-freeze until ready to serve.
  21. Remove your cakes from the freezer to prepare for serving.
  22. Let stand for 10 to 15 minutes.
  23. Slice your cakes using a knife that is very sharp and has been put under warm water.

Tips

  • Be sure to work quickly at each step of placing the ice cream on your cake to prevent it from melting before you get your cake into the freezer.

  • 1/2 gallon (1.9 L) pralines and cream ice cream or any that you love
  • 2 pints (0.94 L) of vanilla ice cream or any that you love
  • 1 container of white frosting or homemade frosting from your favorite frosting recipe
  • Spatula
  • Serrated knife

  • Pastry bag
  • Food coloring and decorating tips for pastry bag
