How to Make African Peanut Soup

Steps

  1. Chop your peppers. You want to make sure you also remove the seeds. Cut into three inch pieces that look like the size of a nail clipper. Then start chopping them into little pieces that look like marbles.
  2. Chop your onion. Chop it into pieces that look just like the pieces of the chopped peppers.
  3. Cut your cloves of garlic into little pieces. You can even mince it, if you want.
  4. Toss your vegetables inside a deep oiled pan over medium heat. Mix the vegetables all around.
  5. While you are waiting for the vegetables to get soft and brown, start chopping your tomatoes into tiny pieces. Then add them to the pan.
  6. Add in your chicken stock or vegetable stock to the pan. This gives the soup flavor.
  7. Let tomatoes and veggies simmer for 5-10 minutes. Again, mix them frequently to make sure they are cooking well.
  8. Once it has simmered well, add rice or a grain of your choice.
  9. Cook for another 20 minutes until the rice or grain is soft.
  10. Add the peanut butter. The best thing about this step is that you can add any kind. Nutty, extra crunchy, creamy, it's your choice!
  11. Sprinkle in your salt and pepper. A pinch of both is all you need, but really, you can add as much as you like because you want it to suit you (and your family) best.
  12. Mix well until peanut butter is dissolved in the soup.
  13. Serve into a bowl that doesn't get hot easily. Top it off with nuts and parsley.

  • If you are a big salt fan you can add a 1/4 tsp of it.

  • If you are adding crunchy peanut butter in your soup you will taste some crunches. This is perfectly normal and great if you like crunchy foods.

  • If you would a little spice chop in some jalapeno peppers instead of bell peppers. Make sure kids don't eat this since it will be spicy, especially for babies and toddlers.
  • It is best to cook this with your teenagers, kids, siblings, parents, or friends. This soup is so simple that anybody could make it and all the other ones can help too.

Warnings

  • Be attended the whole time while cooking this soup. It is fast and may burn. Not only that but it could cause fires for not watching enough.
  • Hold your pot using oven mitts. The handles will be hot and you don't want a burn.
  • Be very careful chopping vegetables. If a kid or teenager wants to chop help them, give some warnings, and watch them cutting closely. They can chop as long as you are there helping them.
