How to Make Lavender Scones

A scone is a British snack and usually served with tea. Some put butter on top or jam. They are lightly sweetened, if lavender is added, it takes on a change of color. United States scones are drier and larger, and typically sweet.


  1. Preheat the oven to 425ºF/220ºC degrees.
  2. Grease and then sprinkle flour on a large baking sheet.
  3. Sift flour and baking powder together in a large mixing bowl.
  4. Mix in the butter until the mixture looks like fine bread crumbs.
  5. Stir in the sugar and lavender (save a small amount to sprinkle on top of the scones before baking).
  6. Add a sufficient amount of milk to make a soft and sticky dough consistency.
  7. Place the dough on a floured surface. Cut the dough into 1 inch (2.5 cm) thick rounds with a cookie cutter.
  8. Place the scones onto the greased and floured baking sheet. Brush the top of each scone with a bit of milk and sprinkle with the reserved lavender and sugar.
  9. Bake for 10 to 12 minutes, until it is a golden brown color.
  10. Serve with rose petal jam and cream.


  • Makes 12 scones.
  • 2 cups (250g) all purpose flour
  • 1 tablespoon baking powder
  • 4 tablespoons (1/2 stick or 60g) sweet, unsalted butter
  • 1/4 cup (50g) sugar
  • 2 teaspoons fresh lavender or 1 teaspoon dried culinary lavender, coarsely chopped
  • 2/3 cup (150 ml) milk, plus extra for glaze
