How to Make Chocolate Chip Banana Bread

My family has enjoyed this sweet banana bread since I started making it several years ago. A secret ingredient, sour cream, makes this bread particularly moist. The miniature semi-sweet chocolate chips are more easily distributed throughout the loaf, but the larger chips also can be used to add the chocolaty surprise that makes this treat so delicious.

Steps

  1. Preheat the oven to 350 °F (177 °C).
  2. Grease and flour the bottom of a 4x8 loaf pan.
  3. Gather a large mixing bowl, hand mixer, spatula, and the ingredients.
  4. Cream sugar, butter, and sour cream in mixing bowl.
  5. Add bananas to mash them into the creamed mixture.
  6. Add vanilla.
  7. Add eggs.
  8. Sift dry ingredients (flour, baking soda, salt) together.
  9. Add dry ingredients to mixture at lowest speed. DO NOT OVER MIX!
  10. Stir in chocolate chips with the spatula.
  11. Pour mixture into greased and floured pan.
  12. Place bread in preheated oven to bake for 55 minutes or until inserted toothpick comes out clean.
  13. Remove bread from oven and let cool in pan for 5 minutes.
  14. Remove bread from pan and let cool on a cooling rack.
  15. Cut slices and enjoy!

Ingredients

  • 2 medium bananas
  • ¾ c. granulated sugar
  • ½ c. butter (or one stick)
  • ½ c. sour cream
  • 1 t. vanilla extract
  • 2 eggs
  • 2 c. all-purpose flour
  • 1 t. baking soda
  • ½ t. salt
  • 2 c. miniature semi-sweet chocolate chips

Tips

  • Handling the dough gently and with as little stirring as possible once the dry ingredients have been added keeps the bread from becoming tough during baking.
  • Bananas can be mashed with a fork before they are added to the mixture.
  • Eggs should always be cracked first into a separate container to allow for the removal of any fragments of shell before they are added to the mixture.
  • Using a spray to grease and flour the pan is desirable as it tends to provide more complete coverage of the pan’s surfaces. The type of spray designed for baking sometimes contains both the shortening and the flour, making the greasing and flour of the pan an easy, single step!

Warnings

  • Using potholders to handle the removing of the bread from the oven is important.
  • Creaming the sugar and butter/sour cream should take about 2 minutes on medium speed.
  • Softening the butter before adding it allows the best consistency for creaming it with the sugar. Leaving the butter out on the counter to soften to room temperature works best. Warming it in the microwave risks melting the butter too much, which can make the bread batter too runny.
  • Butter-flavored shortening can be substituted for the butter, but the bread will not be quite as moist.
