How to Make a Crab Louie Salad
Arguably known as the "King of Salads", the Crab Louie (or Louis) salad has been around since the early 1900s. It is found on many seafood menus along the West Coast of the United States, mainly Oregon and California. Here is how to make a Crab Louie salad.

Dressing
- 2 cups (450g) mayonnaise
- 1 cup (240g) tomato ketchup or 1/4 cup (70g) chili sauce
- 1/2 cup (122.5g) sweet relish
- 1/2 cup (68g) chopped black olives
- 2 hard boiled eggs, chopped
- 1 head iceberg lettuce, chopped
- 8 to 12 ounces (226g to 340g) fresh picked Dungeness crab meat
- 1 avocado, peeled, pitted, and sliced lengthwise thinly
- 3 tomatoes, quartered
- 1/2 lb (1 1/4 cups or 226g) asparagus spears, cooked
Tips
- Artichoke hearts are as tasty as and can be used instead of the asparagus spears.
- A quick substitution for the dressing is to use Thousand Island dressing instead.
