How to Make Stir Fried Chicken and Broccoli
Stir-fried chicken and broccoli is a delicious dish that is relatively easy to make. Enjoy!
Steps

Cut broccoli tops into bite-size florets. Peel and thinly slice the broccoli stems, keeping the stems and florets separate.

Toss the chicken strips, half the garlic and ginger, soy sauce, and sugar, 1 teaspoon corn starch, sesame oil, and salt to taste in a bowl. Marinate at room temperature for 15 minutes.

Dissolve the remaining cornstarch in the broth or water.

Heat a large nonstick skillet over high heat. Add 1 tablespoon vegetable oil. When the oil is hot, add the broccoli stems and stir fry for 1 minute.

Add the broccoli florets, red pepper, remaining garlic and ginger, and 2 tablespoon of water. Season with salt and pepper. Stir-fry until the broccoli is bright green but still crisp, about 2 minutes. Transfer the vegetables into a bowl.

Get the skillet hot again and add remaining 2 tablespoon vegetable oil. Add the chicken and marinate and stir-fry until the chicken begins to turn brown, about 4 minutes. Return the broccoli to the pan and toss to heat through. Stir in the cornstarch in broth or water, and bring to a boil to thicken. Add a few tablespoons of water or broth if the sauce becomes too thick.

Serve immediately with rice.

- 1 lb chicken tender strips
- 2 clove garlic, minced, divided use (optional)
- 1-inch piece fresh ginger, minced, divided use
- 1 tablespoon + 1 teaspoon cornstarch, divided use
- 1 tablespoon soy sauce
- 1 tablespoon sugar (optional)
- salt & pepper (to taste)
- 1 tablespoon sesame oil
- 1/3 cup low-sodium chicken broth, or water
- 3 tablespoons vegetable oil, divided use
- 1 red bell pepper, cut into strips (optional)
