How to Use Garlic Scapes

Garlic scapes are the tender stems and flower buds found on a garlic plant. Harvested in later spring/early summer (June, northern hemisphere or December, southern hemisphere), they are are soft, tender, and curly.


  1. Check that the scape is curled. If the scape is straight, it will be tough and inedible. The scape must be curled, with a yellow-green stalk and a white, tender bulb.
  2. Trim off any tough ends, or stringy pieces. Remove any yellowed flower tips.
  3. Add to dishes. Garlic scapes are great for salads or for cooked food.
    • Raw - the garlic scapes will taste hot and peppery.
    • Cooked - the garlic scapes will mellow and taste much sweeter.


  • Store the scapes in the refrigerator, wrapped in a paper towel and placed inside a plastic bag. They will stay good for up to 3 days.
