How to Make Scrambled Eggs Using a Double Boiler

Reportedly, Thomas Jefferson preferred scrambled eggs made in this fashion. Scrambled eggs cooked in a double boiler makes a creamy and delightful egg dish.


  1. Scald milk in the double boiler.
  2. Add butter.
  3. Beat eggs with salt and pepper.
  4. Pour the hot milk over the egg mixture.
  5. Return egg mixture to the double boiler.
  6. Cook stirring constantly.
  7. Scramble eggs until "lumpy" but tender.
  8. Serve immediately (serves 2-3).


  • 4 eggs
  • 1 teaspoon salt
  • Pepper
  • 1/2 cup milk
  • 1 teaspoon butter


  • For economy, the butter may be omitted.
  • Be sure the double boiler inset does not directly touch the boiling water.
  • Spray the double boiler with nonstick cooking spray for easy clean-up.
