How to Replace White Wine

White wine is a popular ingredient for preparing savory recipes, but it might not be a viable option if you don’t have any in your kitchen, or if you practice a specific lifestyle. Don’t worry—there are plenty of replacements, including some ingredients that you likely have on hand already. Experiment with different ingredients so you can prepare new and old recipes with ease!

Using a Single Substitute Ingredient

  1. Choose white wine vinegar to replace the acidity of the wine. Look through your pantry and see if you have any white wine vinegar lying around. You can easily deglaze your cooking ware with this ingredient, especially since it’s essentially the non-alcoholic version of white wine. If you don’t have this ingredient lying around, you can easily find it in most grocery stores.
    • Follow the recipe as you normally would, but pour in white wine vinegar instead of traditional white wine.
    • Since white wine vinegar is similar to white wine, it’s a great option for a variety of savory dishes.
  2. Switch out white wine vinegar with white grape juice when preparing sweeter dishes. Look for white grape juice in your grocery store, which is made with green grapes. Keep in mind that this juice is much sweeter than white wine, and may affect your recipe overall if you don’t mix it with vinegar. As you prepare the dish, add the same amount of juice as white wine that’s listed in the recipe.
    • If you’d like your recipe to be a little sweeter, then white grape juice is the ingredient for you.
    • Apple juice is also a great replacement for white wine.

  3. Replace your white wine with vegetable or chicken stock. Check your pantry for any light-colored stocks, like ones that are chicken- or vegetable-based. Pour some stock into your recipe that’s equal to the specified amount of white wine. This can help make your recipe extra flavorful, especially if you’re making something savory.
    • Beef stock is a better replacement for red wine.
    • Stock is a great addition for savory dishes, and can add a lot of extra flavor to your dish. For instance, if you’re preparing a recipe with a large cut of meat, then chicken stock might be the best replacement.
  4. Add some Vermouth to your recipe if you don’t mind using alcohol. Look through your pantry or cupboards to see if you have any Vermouth lying around. As another dry wine, it’s a great replacement for your white wine, and will have the same effect when used in a recipe. You can use the same amount of Vermouth as white wine that’s called for in the recipe.
    • Vermouth is a good option if you need a quick substitute for a recipe. However, it’s not a viable option if you’re to keep your dish halal or otherwise alcohol-free.
    • Vermouth is very similar to white wine, and is a great go-to replacement if you don’t mind using an alcoholic substitute.

Creating Alternate Mixtures as a Replacement

  1. Mix white grape juice and rice vinegar together as a replacement. Pour ⁄3  c (79 mL) of white grape juice into a small bowl, then stir in 1 US tbsp (15 mL) of rice vinegar. Continue combining the ingredients together at this same ratio if you need more white wine for a recipe.
    • This is a great option if you don’t want the sweetness of the juice to seep into your recipe.
  2. Combine broth and lemon juice or white wine vinegar. Pour ⁄2  c (120 mL) of plain broth into a bowl, then measure in 1  tsp (4.9 mL) of lemon juice or white wine vinegar to make it more acidic. Mix both ingredients together thoroughly, then add it to your recipe as usual.
    • This might be a good replacement for meaty recipes, as the broth will add extra flavor.
  3. Pour diluted lemon juice instead of white wine. Mix lemon juice and water together at a 1:1 ratio so your recipe isn’t excessively sour. Stir this replacement into your recipe in lieu of white wine, which will give your dish the same zing that white wine offers.
    • This might be a good solution for more refreshing dishes, like shrimp scampi.

Tips

  • You may want to use a tiny bit less vinegar or lemon juice when replacing your ingredients, as these ingredients are a bit sharper than white wine.
