How to Select and Store Tamarillos

Tamarillos are a fruit native to South America. You may know them by the older name of "tree tomato". Tamarillos come in three colours: red, gold and yellow. Not only do tamarillos taste good, they are great for your health with high levels of Vitamin C, A, B6 and E, and potassium. Here are some tips for selecting and storing tamarillos.

Steps

  1. Purchase ripe tamarillos. Tamarillos should be fresh, with no green skin around the calyx. If there is green skin, this means that the fruit will not ripen and it will taste inferior. The flesh should be firm but slightly soft to a gentle touch. It should also be heavy for its size and unblemished. Ripe tamarillos are fragrant.
  2. Store. Tamarillos can be stored at room temperature or in the refrigerator. If stored in the refrigerator, they will last up to two weeks; one week for those stored at room temperature.
  3. Prepare. When using tamarillos, wash first. If you want to eat the flesh easily, scoop it out and eat with a spoon. For other uses, the tamarillo should be peeled. To peel it, cut a cross in the base. Blanch it to remove the skin quickly.
    • To remove the skin from a tamarillo, boil water in a saucepan and drop in the tamarillo for one minute. Remove and test if it peels easily (if not, boil for another minute). Place in a bowl of cold water, then peel once cold enough to handle.
  4. Use the tamarillo. There are many uses for tamarillos. Not only can they be enjoyed as they are, scooped out of the skin but they are also great in chutneys, relishes, preserves, jams and sauces.
    • When cooking with tamarillos, always use stainless steel or enamel saucepans and knives. This will avoid discoloration.

Tips

  • Skin the tamarillo, slice it thickly and sprinkle with brown sugar. Place in the fridge for at least 2 hours, then enjoy a delicious treat for breakfast, dessert, or a snack.
  • The tamarillo season runs from April to October in the southern hemisphere.
  • Make a tamarillo salsa using green chillies, diced tamarillos, a pinch of sugar, grated lemon zest, and fresh coriander and mint.
  • Red is the most common colour for a tamarillo but they can also be purple or golden in colour. Golden ones are the sweetest.
  • Dip in frozen orange juice concentrate to sweeten the fruit.

Warnings

  • Avoid storing tamarillos next to bananas, apples, or citrus. These give off ethylene gas and will ripen tamarillos too quickly.
  • Tamarillos are highly perishable and will rot quickly after the time suggested for storage.
