How to Make Lemon Pepper Turkey

The holidays couldn't be more complete without the turkey. Lemon pepper turkey switches your classic turkey recipe to a sour and slightly spicy turkey dish that you'll enjoy eating. Warm and roasted nicely, lemon pepper turkey completes almost every dinner table.
  • Serves: About 12


  1. Allow the turkey to sit a room temperature for about half an hour.
  2. Preheat the oven to 350° Fahrenheit (176° Celsius).
  3. Remove the giblets and neck from the turkey.
  4. In a small bowl mix the peppercorns, one tablespoon of salt, and lemon. Grate two lemons and combine the zest with the salt and peppercorns.
  5. Pat the turkey with a dry paper towel.
  6. Season the lemon mixture all over the turkey, including the inside and skin. Rub and season it all around with your hands.
  7. Stuff the turkey. Cut the lemons into quarters and stuff it into the cavity of the turkey. Add the onion, celery, and thyme sprigs as well.
  8. Tie the legs of the turkey with kitchen twine.
  9. Place the turkey in a roasting pan. Tuck the wings under the turkey.
  10. Cook the bacon on a medium saucepan on medium heat. Have the bacon cook until crisped, taking about 7-8 minutes.Transfer the bacon on a plate covered with a napkin once cooked. Set aside the bacon grease for late use.
  11. Chop the bacon into small-sized pieces using kitchen scissors. Set aside.
  12. Melt the butter with the butter grease over medium heat. Mix until the butter is fully melted.
  13. Squeeze the lemon juice from the remaining two lemons and pour it into the butter mixture.
  14. Allow the lemon butter to cool for about 10 minutes.
  15. Brush the lemon butter over the turkey using a pastry brush.
  16. Place the turkey in the oven and have it roast for about an hour.
  17. After the turkey has roasted brush it with more lemon butter and allow it to roast for another 30 minutes. Remove the turkey from the oven once the skin is golden brown and crispy.
  18. Have the turkey cool for about 30 minutes.
  19. Serve. Sprinkle the bacon bits over the turkey. Serve with gravy if desired. Enjoy!


  • 1 (12-14-pounds) turkey, thawed if frozen
  • 4 lemons
  • 2 tablespoons coarsely cracked black peppercorns
  • Kosher salt
  • 1 onion, cut in quarters
  • 2 stalks celery, cut into chunks
  • 3 sprigs thyme
  • 9 slices (8 ounces) bacon
  • 4 tablespoons unsalted butter


  • Serve the turkey with any desired vegetables, mashed potatoes, and/or rice.
  • If you would prefer not to, you do not need to add the bacon onto the turkey.
  • Ensure you spread the lemon butter on the turkey every 30 minutes while it roasts so the turkey can have flavor.
  • It's recommended to use fresh turkey for best results.
