How to Bake Eggless Chocolate Chip Banana Muffins

Do you want to bake muffins but are allergic to eggs? Or maybe you don't have any eggs in stock. Follow this recipe to bake a dozen delicious muffins!

Steps

  1. Preheat your oven to 425 degrees Fahrenheit. You'll be lowering the temperature to 400F as soon as the oven is preheated and you're about to put the muffins in. Doing this helps the muffins to rise.
  2. Measure and combine your dry ingredients (the flour, sugar, baking powder and salt) in a large bowl.
  3. Peel and mash your banana in a bowl (large enough to hold 2 cups).
  4. Add to the mashed banana your milk and oil/butter. Stir it together.
  5. Make a well in the centre of the dry ingredients.
  6. Stir in your wet ingredients into the dry ingredients. Make sure to stir well and get all the dry ingredients mixed in.
  7. Add in the chocolate chips. Stir in the chocolate chips so they are throughout the whole mixture.
  8. Line a muffin pan with muffin liners or silicone muffin liners (these work very nicely if you hate your muffin sticking to the paper liners).
  9. Place the muffins on the bottom rack once the oven has preheated to 425F.
  10. Lower the temperature to 400F.
  11. Bake for 25 minutes or until golden and cooked thoroughly.
  12. Wait for your muffins to cool down and enjoy!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup oil or melted butter
  • 1 ripe banana
  • 1 cup chocolate chips

Tips

  • This recipe tastes great as a banana chocolate chip loaf too! Make it the same way but bake it in a greased loaf/bread pan.
  • It's optional to start the oven off at 425F and then lowering it to 400F. The muffins may need a little longer than 25 minutes to cook.
  • This recipe can replace the banana with an egg if you like the recipe but don't enjoy bananas.
  • This recipe works great as a banana bread as well.
