How to Make Egyptian Basbousa Cake

Basbousa is a cake-like, Middle-Eastern dessert, and can be prepared in many ways. This article teaches you to make it in the traditional Egyptian way.

Preparing the Mixture for the Basbousa

  1. Preheat the oven to 350°F (180ºC).
  2. Grease a 9" round cake pan. Do not use a glass pan.
  3. Line the bottom of the pan with parchment paper. This will prevent the cake from sticking to the bottom of the pan.
  4. Mix 1 cup of white sugar and 1 cup of plain yogurt in a large bowl.
  5. Add 2 cups of semolina flour, 1/3 cup of milk, 1 teaspoon of baking powder, and 10 tablespoons of melted butter. Stir the mixture slowly.
  6. Let the mixture stand for 3-5 minutes. The butter will completely absorb within this time.
  7. Transfer the semolina cake mixture from the large bowl to the pan.
  8. Bake for 40-45 minutes, until the top is golden brown.
  9. This is how it should look like after it is finished baking.

Preparing the Cinnamon Syrup

  1. Combine the 1 1/2 cups of sugar, 2 cups of water, and the cinnamon stick in a small saucepan.
  2. Bring to boil over high heat. Keep stirring the mixture until the sugar completely dissolves.
  3. Turn the heat to low. Let the syrup simmer for about 3-5 minutes, until it's thick.
  4. Remove the syrup away from the heat. Don't forget to turn off the stove.
  5. Add 1/4 teaspoon of lemon juice. Stir the mixture gently.
  6. Let the syrup cool completely. Take out the cinnamon stick and discard it.
  7. Remove the cake from the oven. Cut it into triangles, and immediately pour the syrup on the hot cake, and return the cake to oven.
  8. Turn the oven off. Keep the door open halfway and let the cake cool until the syrup is completely absorbed.

The Toppings

  1. Slice the 1/4 cup of almonds into small pieces.
  2. Top the Basbousa with the almonds and the 1/4 cup of coconut chips. You can also add peanuts instead of the coconut and almonds.
  3. Serve and enjoy!


For the Cake

  • 1 cinnamon stick

  • 1/4 cup of almonds
