How to Make Vegan French Onion Soup

This soup uses miso to replace the broth that usually makes up the base of soup. Also, vegan cheese is used in this recipe in substitute of an animal based cheese, such as cow or goat's cheese. Side note: Many packaged Miso soups contain different types of fish i.e. dried Sardines or Bonito so make sure you find the vegetable or shiitake mushroom versions.

Preparing the croutons

  1. Slice your baguette diagonally for a look. After you remove the croutons from the oven, they will continue to grow more crisp as they cool.
  2. Preheat your oven to 350 degrees Fahrenheit (180°C). Spray a flat sheet with nonstick spray.
  3. Brush both sides of each slice with oil.
  4. Place the slices on a sheet. Bake them for a minute, flip them over, and bake them an additional minute.
  5. Set the croutons to the side and allow them to cool.

Prepare the Soup

  1. Heat a saucepan over heat. Add the oil and heat it until the oil is shimmering.
  2. Place the slices in the saucepan and cook them, stirring them constantly, until they are soft and brown. This should take approximately 20 minutes.
  3. Pour the water into the saucepan over the onions and bring the water to a boil.
  4. Mix in the miso and the thyme with a spoon until the ingredients are well combined. Lower the heat until the soup is simmering.
  5. Taste the soup and add salt and pepper until the seasonings are to your liking. Continue to simmer the ingredients for minutes.

Broil the Topping

  1. Preheat your broiler.
  2. Place 4 small bowls or crocks on a sheet or pan. You may want to cover the sheet or pan with foil so that cleanup is easy in case the soup or cheese dribbles out of the bowls.
  3. Divide the soup among the bowls.
  4. Place croutons on top of each bowl of soup.
  5. Top each cup of soup with Gruyere.
  6. Put the sheet or pan and the bowls into the oven under the broiler.
  7. Broil the soup until the cheese starts to brown and the soup begins to bubble.
  8. Remove the bowls of soup from the oven and serve them immediately.
  9. Finished.

Croutons

  • 8 slices, 1/4" thick baguette
  • 1 tbsp. oil

Soup

  • 1/4 cup oil
  • 2-1/2 lbs. (4 cups) onions, thinly sliced
  • 3 cups water
  • 1/3 cup miso
  • 1 tbsp. thyme, finely chopped
  • Salt
  • Pepper, freshly ground
  • Vegan gruyere cheese for topping

Tips

  • There are different types of miso including chickpea miso and rice miso, depending on the variety, your soup will taste different.
  • You may be able to find miso at a Asian supermarket in your area. Miso is traditionally from Japan, but Chinese or speciality supermarkets may also carry it. Natural food stores may also carry miso.

Warnings

  • Never leave the room when you have food under your broiler. Check at least every minute so that you don’t burn the topping.
